prefer the fonts of MX-16

I just finished upgrading from 16 to 17, because I see you have MX-18 in beta, and I don't try to keep on the bleeding edge but I thought I probably shouldn't stay more than one release behind. (I think I tried 17 at least once before and chose to go back to 16, but I can't remember why anymore anyway.) Well, MX-17 works for me, but I must say I prefer the fonts I saw in MX-16. I don't suppose it's possible for me to switch back in any way other than manually changing every font one-by-one.

MX 18 is not in beta. It has been releases as Final.

I'm not getting this. If you know the name of the font in MX-16 (I've forgotten), just select it in the usual manner: Settings > Appearance > Fonts.

the droid fonts used in mx15/16 are not included on 17 (the were no longer available IIRC). that's when we switched to the noto sans fonts.

Could you "borrow" them from a MX15/16 install or loop mounted iso, i.e. copy their /usr/share/fonts/truetype/droid & /usr/share/fonts-droid/truetype folders over to MX-18 ?

IIRC, MX-15/16 used fonts-droid-fallback (backported from stretch) to provide the droid fonts and that is still available in the main stretch repositories.

I really didn't see much difference between Droid Sans and Noto Sans myself. Some people see a difference in the font rendering in MX 18, saying they are sharper and clearer, since we have updated fontconfig and libfreetype6 to support GIMP 2.10.8.
