Used to other distros where right-clicking on the app tab gave options that include "Move to another workspace" -
I just can't find where to do that here - clue, please?

Try right clicking the top bar, not the tab

You can also drag its icon in the Windows Buttons part of the panel to the relevant part of the Workspace Switcher. I personally find that the quickest way.

click window box, right click app in question, there' the option list.
An extra click, but easy enough.
