Adata are good budget drives, with decent reviews, so if you found one at a bargain price you shouldn't be put off.

Yes, yes, yes. There's no reason to run rotational HDDs for your system if you have $17. It's a great improvement. You can keep HDDs as a secondary drives for data if needed (or backups), but 120GB should be plenty for a root Linux partition. I used Kingston and Adata interchangeably, didn't see a difference in speed or reliability. The difference that you'll see will be between HDD and SSD.

No problem when moving large files? From what I understand, cheaper ssd are often if not always without Dram. Very convenient in most situations but it seems samsung evo 860 and crucial MX500 are a better bet with a slightely higher price.

My opinion is that you get what you pay for, but the larger difference is between HDD and SSD, not between SSD and SSD (generally speaking, it might not be true in some particular cases) so if you can afford a better SSD, yeah sure, but if you want to spend only $17 to improve the performance of your computer significantly, you can do it.

In any case there are no Evo nor MX500 with less than 250Go of memory. You have the cheaper BX family with 120Go. From what I see, If you want 120Go there are only dramless ssd (A400 or Adata SSD). From 500Go on, the price difference is about 10€ max between DRAm ssd and dramless ones (there are often discounts).
For 120Go Kingston A400 is a good choice.

I have had good luck with the Dogfish brand out of Hong Kong (where they are fabricated,apparently). Marketed by Newegg, among others. At least with a 32GB SSD that I slapped into an Acer Atom n270 based netbook, and a 128GB mSATA that I put into an Intel 180GB SSD equipped Lenovo T430, as an extra SSD.
