Pdftotext is available with the poppler-utils package. As Jerry3904 said, you can import the text file into LO Writer, make edits, and use LO's built-in feature to save it as a pdf. It's very easy to create pdf files, but as said earlier, pdf files are simply a bear to edit. Acrobat can sort of do this, but only to a limited extent.
