I don't think it's possible to install Linux on 2018 Mac Mini. You can boot (at least some Linuxes) but as you discovered cannot install, I would be interested if any Linux installs on 2018 Mac Minis...

I think you have some disk errors, you probably need to boot from Live USB and then use fsck to check you sda disk for errors. Not sure exactly what switches to use, I don't think it even happened to me so I don't really have experience with this so it's better to hear from people who have more expe...

I would comment out the test repo, you shouldn't leave it enabled. Add a # in front of this line in mx.list:
