Well I checked the downloaded iso file and it all checks out with the checksums. I decided to dd the iso to usb stick and it all worked fine. with the debian repos disabled, you won't get many updates. I would say most of the packages you are missing come from the debian repo.

there have been no changes in the network-manager package nor any default network settings. can you show the contents of /etc/network/interfaces and any files under /etc/network/interfaces.d/ network-manager won't manage an ethernet connection that is defined in those places, which is the reason to ...

You can remove. It will still be in the linuxfs until another remaster.

FYI antiX is systemd-free. There is a bit of overlap with mx with some tools and the antix live system

in order to boot the linuxfs file system, the kernel actually lives outside it. so the kernel vmlinuz image and the initrd will load everything else. live-kernel-update updates the vmlinuz file to whatever kernel you have inside the remastered linuxfs file.
